The single Thunderbolt 3 bus of the 2019 iMac 5K remains a drawback versus the iMac Pro, since arguably those needing 128GB are most likely as a group to need maximum Thunderbolt bandwidth. On the other hand, the 2019 iMac 5K is likely to be a bit faster for tasks that use four CPU cores or less.

The 2-module kit costs more because it uses higher-density memory chips, which are more expensive. If going with 64GB, MPG recommends the higher-priced 2-module 64GB kit (2 X 32GB) if there is any potential for later needing 96GB or 128GB.
For myself, I’d go with the 96GB memory kit because I don’t anticipate needing more than that (and it saves over $300). Because of system overhead, 96GB is more like 104GB in terms of memory usable by applications versus 64GB—60% more, not just 50% more.
Since the 2019 iMac 5K uses dual channel memory, four modules versus two has no bearing on memory bandwidth, unlike the iMac Pro.
